Yesterday, we went out for lunch with friends. We really like to go out for dinner, but in London we find most of the restaurants are average. Nevertheless, there are good/great restaurants in London.

We went to an italian restaurant in the Soho area. We both shared an exquisite salad. It was more of an antipasti which looked like a salad. It was simply excellent tasting.

And what was more delicatable was their cakes and coffee. To get good coffee, is hard to find. You would have to go to mainland Europe for the some of the best coffee's in the world. But this place produces the best coffee in all of London, so far.

Here is the recipe I think on how to make this anitpasti salad:

A couple of roasted potatoes
1 roasted red pepper (cut in half)
2-3 slices of aubergine (eggplant) roasted and marinated
1 slice of zucchini roasted and marinated
a couple of marinated artichokes
slices of tomatoes and cucumbers
a couple of tablespoons of marinated baby mushrooms
chopped spring onions
dark green lettuce

Place the bed of lettuce at the bottom of the plate. Arrange all the above vegetables onto the plate. Serve the vegetables with olive and balsamic vinegar.

It is a very simple salad, but certainly pretty and enjoyable.
