You have to eat healthy, but never go to the extreme. We have sometimes a pumpkin gratin. What I do is I boil the cubed pumpkin in some bouillon for about 10 minutes. I can place the pumpkin in a casserole dish. I mix the pumpkin with grated cheese, butter, salt and pepper. I than place sour cream on top of the gratin. I then place in the oven, for about 25 minutes, or until slighty brown.
Have the pumpkin with some Quornature, Rice and some stewed tomatoes.
